Clara Darling, Director of the Samford Wellness Kitchen will be making a delicious seasonal dish, Fall Vegetable Farro Salad with Miso Vinaigrette, assisted by some of her nutrition students from Samford. After earning a BS in Culinary Nutrition from Johnson & Wales in Denver, and an MS in Nutrition and Dietetics from Samford Univ. here in Birmingham, plus working in top tier restaurants, Chef Clara Darling joined the Samford faculty and became Director of its Food Labs and Wellness Kitchen in 2020. In addition to teaching nutrition and dietetics undergrads, Darling is also building a community education program, focusing on healthy cooking classes for kids and adults. (Find more details here.)
